Are you a huge fan of asparagus, constantly searching for new dishes that feature your favorite veggie. These Asparagus puff pastry bundles would make an amazing addition to your weekend brunch, and they’re 100% plant-based.

This delicious recipe was developed by food blogger Bianca Zapatka, who uses primarily vegan ingredients in all of her recipes. In case you’re not committed to a plant-based diet, replacing dairy/free cheese with regular one is also an option.

Ingredients:

  • 1 bunch asparagus, ends trimmed
  • 150 g dairy-free herb cream cheese
  • 6 dairy-free cheese slices
  • 1 sheet puff pastry, fresh or thawed
  • 3 tsp olive oil
  • 2 tbsp non-dairy cream
  • salt and pepper
  • 1 tbsp fresh thyme leaves
  • fresh lemons

Instructions:

  1. While preheating the oven to 425F, use parchment paper to line a baking sheet.
  2. Toss asparagus and 2 tsp of olive oil together, add salt and pepper to taste.
  3. Roll the pastry sheet out and cut it into 6 or 8 square pieces, and spread dairy-free cream cheese on each square. Add dairy-free cheese slices and 3-4 stalks of asparagus to each square.
  4. Pull two opposite corners of your pastry slices in each other’s direction, wrap them up and seal them over the asparagus.
  5. After wrapping up all the square pieces, arrange them on a baking sheet, making sure to leave enough space between them. Brush each pastry bundle with olive oil and non-dairy cream.
  6. Put a baking sheet in the oven until puffed and golden brown, for approximately 20-25 minutes.
  7. Garnish with fresh thyme leaves and a drizzle of lemon juice, and serve while warm.
