Summer’s Peach Season, It’s Time to Make Bellini Cocktails

One of summer’s best fruits, peaches are amazing in bellinis, a sparkling Italian cocktail that are made with Prosecco and peach puree. They’re super refreshing, fizzy, and easy to make. Ingredients:

  • 4 medium ripe peaches, plus peaches for garnish
  • 1 bottle Prosecco, chilled

Instructions:

  1. Make the peach puree by peeling your peaches, slicing them in half, and removing the pits. Place the halved peaches in a blender or food processor and blend until the puree is smooth. Place it in the refrigerator for at least 30 minutes or until cool.
  2. Pour 2 ounces (1/4 cup) chilled peach puree into a Champagne flute and pour in chilled Prosecco. Don’t overflow the glass and stir with a spoon to combine.
  3. Top the drink with a splash of Prosecco and garnish with a peach slice.
