Side Dish Ideas for the 4th of July

Come 4th of July, many of us will find ourselves either on the receiving end of an invitation to a cookout or hosting one ourselves. While burgers and hotdogs are certainly something to look forward to, in our opinion, the side dishes are what can really take a barbeque from good to great. They provide so much opportunity to incorporate fresh ingredients and fun flavors that we can always look forward to filling our plates with. Whether you’re hosting or attending as a guest, you can’t go wrong with any of these salads:

Poblano Corn Salad

Bring south-of-the-border flavors to any location with this fresh corn salad by Meg Unprocessed. Poblano peppers add a little kick while cucumber and tomatoes keep things light. Top it all off with some fresh cilantro and lime juice.

Spinach Strawberry Salad

Even spinach can be made delicious with the addition of some fresh strawberries and candied hazelnuts. This salad by Minimalist Baker calls for vegan feta cheese, though regular feta could be used if you prefer. 

Lemon Orzo Pasta Salad

Fried chickpeas, baby spinach, sundried tomatoes, and lemony orzo pasta come together in this pasta salad by Rainbow Plant Life. It’s so good, we wouldn’t mind eating it as a stand-alone meal.
