Onions and garlic are the basis of almost every dish, but on their own, raw onions can be a bit harsh. That sharp flavor is not for everyone, but pickled onions are a whole other ballgame. Super quick and easy to make, they will add a pleasant punch to bagels, burgers, and salads.
Ingredients:
- 2 medium red onions
- 2 cups warm water
- 1 cup white vinegar
- 1 tablespoon maple syrup
- 1 teaspoon sea salt
- 1 green chili (optional)
Instructions:
- Peel and slice the onions into thin slices and place them along with the chopped chili into a clean sterilized mason jar.
- Pour in the warm water and vinegar.
- Add the salt and maple syrup. Tightly secure the lid and turn it upside down a few times so all the ingredients are mixed together evenly.
- Place the jar in the fridge for at least 1 hour before eating to allow the onions time to pickle. For best results, wait a few hours or overnight. The onions will keep for about a month in the refrigerator in an air-tight mason jar.
