One Sauce, Three Meals

Sauces are versatile, being used to add flavor and texture and make meals more interesting. If you batch-cook enough of this sauce, you will have three different meals ready to go.

Green Sauce

Ingredients:

  • 1 cup of almonds
  • 4 cloves of garlic
  • 3 green tomatoes
  • A large bunch of parsley, basil, cilantro, and mint
  • 1 onion
  • 1 tablespoon of flour
  • 4 tablespoons of olive oil
  • 1 teaspoon of white wine vinegar
  • 3 tablespoons of water

Instructions:

  1. Toast the almonds by heating them in a heavy-based saucepan. Don’t allow them to burn, move them regularly. Once they are toasted, remove from the heat.
  2. In a separate pan, heat the oil and add the finely sliced onion to the pan.
  3. Cook for 7 minutes, then add the garlic. Cook for another 5 minutes, then add the flour, making sure it is coated in oil.
  4. Cook for two minutes, then add the sliced tomatoes. Cook for 5 minutes, then add the chopped herbs and the vinegar.
  5. Finally, add the almonds and the water and a pinch of salt, and blend the sauce in a food processor. Decant into sealable containers, it will keep in the fridge for a week, or in the freezer for 3 months.

Green Sauce With Pork Chops

To serve 4 people, sear 4 pork chops in a hot pan by placing them down on each side for 3 minutes. Remove, place in a baking tray, and cover with 5 tablespoons of the green sauce. Roast them for 15 minutes, until the chops are cooked through. Serve with potatoes and green veg.

Green Sauce With Pasta

Cook pasta according to packet instructions, retain ½ a cup of the cooking water, stir through 6 tablespoons of the green sauce, and serve.

Green Sauce Bake

Layer lasagne sheets with green sauce, bechamel sauce, and tinned lentils, for a vegetarian alternative to a traditional lasagne.
