Want to step up your seafood game? Well, one way to do it is to cook more seafood, read about it, and take courses. Another, perhaps easier one, is to take a few words of advice from Martha Stewart. The popular cookbook author and TV personality recently had a chat with Food & Wine in which she revealed some of her favorite seafood tips she collected over the years.

Pay Attention to the Clock When Cooking Lobster

Overcooking lobster probably happens to people more than they would like. According to Stewart, that is all because they fail to pay attention to the clock. If you have a pound and a quarter of fresh lobster, cook it between 13 minutes and 18 minutes. Anything more and it will be overcooked. A good that you did this is that the “claw is half the size of the shell.”

Know Your Clams

When buying clams, make sure they are tightly sealed, says Stewart. She also recommends avoiding ones with cracks on their shells. Also, if you don’t intend to cook them right away, make sure they remain “icy cold”.

Don’t Disregard the Seaweed

Stewart is a big seaweed advocate. She says that seaweed can be great for the presentation of seafood while also having other uses. For example, Stewart dries seaweed and combines it with salt to create “seaweed salt” seasoning.
