As a Mediterranean country, Greece loves its salads. After all, its combination of feta, olives, cucumbers, tomatoes, and onions makes up one of the most famous salads in the world! But while traditional Greek salad may get all the glory, this is what the locals are really eating. Maroulosalata, which translates to a lettuce salad, is as simple and yummy as it gets.

Ingredients:

  • 2 romaine lettuce hearts
  • 4-5 scallions
  • ¼ cup fresh dill, finely chopped
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon mint, finely chopped
  • ½ cup Greek olive oil
  • 3-4 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon dried oregano
  • A pinch of salt

Instructions:

  1. Thinly slice the lettuce and scallions and place them in a bowl with the fresh herbs.
  2. Whisk together the olive oil, vinegar, oregano, and salt until it emulsifies.
  3. Pour the dressing over the salad greens, and toss.
