It always comes in handy to have a jar of pickled red onions in the fridge. They upgrade any sandwiches, burgers, and tacos but can also be used for salads and stews. Best of all, you don’t even have to buy them. Making pickled red onions at home is super quick and super easy. Here is how.

Ingredients:

  • 2 medium-sized red onions
  • ½ cup vinegar (rice, white, or apple)
  • 1 cup water
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • 1 teaspoon peppercorns

Instructions:

1. Clean the red onions and chop them to thin slices. Put them in a clean glass jar.

2. Combine vinegar, water, sugar, salt, and peppercorns in a pot. Bring to a simmer.

3. Pour the brine into the jar with onions immediately after taking the pot off the stove. Make sure that all the onions are covered with brine.

4. Wait for the jar to cool off at room temperature before placing a lid on it and storing it in the fridge.

5. You can eat the onions right away, but it is best to leave them overnight for them to marinate.

6. The pickled red onions will remain good for a few weeks in your fridge, but we doubt it will take you that long to eat them.
