Make a Refreshing Raspberry Tart in Few Easy Steps

When it’s hot outside but we still need something sweet in our bellies, we suggest skipping the chocolate and instead making a refreshing raspberry tart. This tasty treat isn’t complicated to make, and it’ll take you just one bite to fall in love with it. Here’s how to do it!

Ingredients

Tart:

  • 1 cup all-purpose flour
  • 2/3 cup butter
  • ½ cup sugar
  • 1 egg
  • 2 teaspoons pure vanilla extract

Raspberry Filling:

  • 2 cups fresh or frozen raspberries
  • ½ cup sugar
  • 1 cup water
  • 1 teaspoon gelatin
  • ½ cup water for gelatin

Instructions

  • 1. Preheat the oven to 350F.
  • 2. Combine the flour, butter, sugar, egg, and vanilla extract into a bowl and mix the ingredients until they turn into a firm dough. You can use an electric mixer with a paddle attachment, but doing it by hand will also do the trick.
  • 3. Take a piece of parchment paper and put the dough on it. Place another piece of parchment paper on top and roll the dough. The paper will prevent the dough from sticking to the surface and the rolling pin.
  • 4. Brush the tart pan with oil and sprinkle some flour on it. Take your rolled dough and place it in the tart pan. Press the dough to the edges of the pan with your finger and trim excess dough.
  • 5. Use a fork to poke some holes in the dough and then top it with parchment paper on which you’ll pour some beans or rice. This will prevent the dough from rising during the baking.
  • 6.  Pop the tart pan in the oven and bake for 25 minutes.
  • 7. While the tart is baking, you need to prepare the filling. This begins with adding raspberries, sugar, and water to a pot. Cook on medium heat and occasionally mix until the raspberries start to dissolve.
  • 8. Separately mix the gelatin and water. Once the raspberries are dissolved, add the gelatin mixture and continue cooking until you receive a dense consistency.
  • 9. By that time, the tart should be baked to perfection. Take it out of the oven and immediately top it with the filling. Let the raspberry tart cool down before you pop it in the fridge for another two hours of chilling.
  • 10. Optionally, you get yourself some whipped cream and cover the tart for an even better treat.
