Ingredients:
- 3 zucchini
- 3 scallions
- 2 cloves garlic
- 2 eggs
- ½ cup shredded Edam
- ¼ cup grated Parmesan
- ½ cup sour cream
- 4 basil leaves
- Salt and black pepper
Instructions:
- Slice the zucchini into thin slices, toss them in a bowl, and salt generously. Let them rest for a bit.
- Chop the scallions and basil. Combine with the Edam cheese in a bowl.
- Drain the zucchini slices and then mix them with scallions, basil, and Edam cheese.
- Brush a baking pan with olive oil and evenly spread the zucchini.
