Ingredients:

  • 3 zucchini
  • 3 scallions
  • 2 cloves garlic
  • 2 eggs
  • ½ cup shredded Edam
  • ¼ cup grated Parmesan
  • ½ cup sour cream
  • 4 basil leaves
  • Salt and black pepper

Instructions:

  1. Slice the zucchini into thin slices, toss them in a bowl, and salt generously. Let them rest for a bit.
  2. Chop the scallions and basil. Combine with the Edam cheese in a bowl.
  3. Drain the zucchini slices and then mix them with scallions, basil, and Edam cheese.
  4. Brush a baking pan with olive oil and evenly spread the zucchini.
  5. Crack the eggs in a separate bowl and whisk them.
  6. Add sour cream, smashed garlic cloves, a pinch of salt, and a pinch of black pepper. Whisk until all the ingredients are combined, and then pour the mixture over the zucchini.
  7. Bake in an oven at 390 F for 15 minutes.
  8. Take out the zucchini, garnish with parmesan, and return to the oven for another 10 minutes.
