Indian Chicken Madras Is What You Need For Lunch Today

If you love Indian food, you have to try this chicken madras recipe. The whole process takes just a little over 20 minutes and it’s meant for 4 servings.

Ingredients

  • 1 jalapeno
  • 1 onion
  • 4 skinless, boneless chicken breasts (cut into pieces of 1 1/2 inch)
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 1 knob ginger one inch
  • 2 teaspoons hot chili powder
  • 8 cloves garlic
  • 1 tablespoon vegetable oil
  • 2 cups crushed tomatoes
  • 1 tablespoon garam masala (instead of garam masala, you can use a mix of 1 teaspoon coriander, 1 teaspoon pumpkin pie spice, 1 teaspoon cumin.)

Instructions

Mix the jalapeno, onion, ginger, and garlic in a blender or food processor. Pulse until the texture is even. Now, mix all the spices together.

Get an instant pot and add the oil. Cook the onion mix for 3 to 4 minutes.

Now, include the spices and continue cooking for 1 to 2 more minutes. Pour the chicken in the pot and cook for 3 to 5 minutes.

Finish off by adding the tomatoes. Cover the pot and let it cook for 4 minutes under pressure. Open the lid and you can serve the chicken madras. If the sauce is too thin you can first take out the chicken and leave the sauce to cook for a few more minutes.
