When you start to get into cooking and baking, it becomes clear pretty quickly that there are a lot more numbers and math in the culinary arts than most people expect. Between conversions and recipe doubling, there’s no shortage of number games you’ll play in the kitchen. And one of the ways numbers are most useful is in ratios, as in how much of one thing you should use with what portion of another. Here’s a list of important cooking ratios that any home cook should know about.

Pound Cake

This is one of the easiest ones there is. Memorize this ratio and you’ll be able to bake a cake at any time without a recipe. Pound cake is made with one part flour, one part egg, one part fat, and one part sugar.

Vinaigrette

Vinaigrette is one of the tastiest and most common types of salad dressing and it’s also incredibly simple to whip up. Just combine three parts oil to one part vinegar of your choosing.

Rice

Cooking rice is all about using the right amount of water. For white rice, use two cups of water to one cup of rice. For brown rice, you’ll need more water: two and a half cups of water for one cup of rice.
