Have you ever heard of jackfruit? It’s an exotic, uncommon fruit, and it doesn’t show up often in Western cooking, but it has one quality that has recently made it explode in popularity: it can do a very good job of tasting like pork. So if you’re a plant-based eater and want to try making a vegan pulled pork sandwich, you might want to get your hands on a can or two of jackfruit and try this recipe. It’s actually quite easy and can fool any meat eater. Here’s how you make it.

Ingredients

  • Canned young green jackfruit in water
  • Brown sugar
  • Paprika
  • Garlic powder
  • Salt
  • Pepper
  • Chili powder
  • Barbecue sauce

Directions

Rinse, drain, and thoroughly dry your jackfruit. Chop off and throw away the center of the fruit. In a bowl, combine the jackfruit, brown sugar, paprika, garlic powder, salt, pepper, and chili powder. Toss to coat.

Heat oil over medium heat in a skillet, then add the seasoned jackfruit, cooking until the jackfruit gets some color on it, for two to three minutes. Add the barbecue sauce, stir, and reduce heat to medium-low. Cook covered for 20 to 30 minutes, stirring occasionally and shredding with two forks toward the end of the process.

After 20-30 minutes, turn the heat up to medium-high and cook for a few more minutes to add texture and color. Remove from heat and serve as preferred, in a sandwich with vegan coleslaw being one of the most popular ways to do it.
