Easy Sheet Pan Black Bean Tacos

Filled with cheese, beans, and a host of crunchy vegetables, tacos can appear difficult to make. Still, they don’t have to be. Here is an easy way for you to cook up some scrumptious sheet pan black bean tacos.

Ingredients:

  • 1 cup shredded Mexican cheese
  • Sour cream
  • Cilantro leaves
  • Lime wedges
  • 5 tablespoons neutral oil
  • 1 teaspoon salt
  • Taco seasoning
  • 1 can black beans
  • 1 yellow onion
  • 8 yellow corn tortillas

Instructions:

  1. Preheat your oven to 425° while placing a large skillet over a medium heat flame. In the skillet, place two tablespoons of oil along with onion and 1/2 teaspoon salt. Cook the onions until soft, constantly stirring for about 7 minutes. Add taco seasoning and a tablespoon of oil, cooking for another 30 seconds.
  2. Add the black beans along with the rest of the salt to the mix along with 1/2 cup of water. Mash down on some of the beans until thickened and reduced. Allow to simmer for about 2 to 3 minutes.
  3. Spread the remaining oil over a baking sheet. Place each tortilla on the pan, ensuring that they are covered with oil, before spooning 1/4 cup of beans into each tortilla. Sprinkle 2 tablespoons of cheese over each tortilla.
  4. Fold tortillas over the cheese to create a taco. Bake the tacos in the oven for 8 to 10 minutes, until the bottom is golden brown. Then, flip the tacos and bake for another 5 to 8 minutes to the same result is achieved on the other side.
  5. Place the tacos on a platter and serve with sour cream, cilantro, and lime wedges.
