Easy No-Bake Rice Crispie Cakes

These no-bake treats are ideal when you want a rich chocolate cake without having to turn the oven on. There’s no faffing around with baking techniques here, but the results are super tasty and satisfying. 

Ingredients (makes 12):

  • 3 cups rice crispies
  • 8 oz butter
  • 4 oz chocolate
  • 2 tablespoons golden syrup 

Instructions:

  1. Break the chocolate into smaller sections
  2. In a large heatproof bowl, add the butter and the chocolate
  3. Place a pan of water on the heat and bring to a gentle simmer
  4. Put the heatproof bowl on top of this, regularly checking to ensure the water doesn’t bubble over
  5. Continuously stir the butter and chocolate until they’re both completely melted
  6. Add the golden syrup and stir throughout
  7. Remove the bowl from the heat, and add the rice crispies
  8. Stir them in, ensuring they’re all completely coated in the mixture
  9. Into a muffin tin, place some cake cases
  10. Spoon the mixture into each of these
  11. You can add a topping of your choice, for example, chopped nuts or desiccated coconut
  12. Once the mixture has completely cooled, place the tray in the fridge for about an hour until the cakes have become solid
  13. Remove and enjoy!
