Delicious Lentil Burgers Will Surely Satisfy

These lentil burgers are perfect for a weeknight meal, having friends over, or something when you’re in the mood for a savory burger that is still healthy. Since this recipe does use an egg, it’s only vegetarian, but if you can find a different binder to make it vegan, go for it!

Instructions

  1. Chop up half an onions, half a celery stalk, 1 carrot and 1 medium sweet potato cubed and throw it into a pan with some olive oil.
  2. Saute the vegetable for about 5 minutes until everything starts to soften.
  3. Shake over some curry powder, smoked paprika, garlic powder, onion powder, and a bit of cumin into the vegetables . Cook for about 1 minute.
  4. Add 2 cloves of chopped garlic and cook for 30 seconds.
  5. Pour in 1/2 cup of green lentils along with 1 1/2 cups of water or stock, and bring everything up to a boil, and then down to a simmer.
  6. Cook the lentils until they are soft, about 20-25 minutes, and then puree if you want a smooth burger, or leave it for something chunkier.
  7. Let the mixture cool and then drop in one egg along with 1/4 cup of breadcrumbs and stir well.
  8. Form the mixture into patties, fry in a pan on both sides for about 5 minutes each, and enjoy!
