Cucumber Popsicles Will Be Your New Favorite Summer Treat

Cucumbers are the ultimate summer veggie. With a high water content of 96%, they work well as a refreshing standalone snack and can take your salad to another level. But did you know that you can also use them to make cucumber popsicles? 

We admit that cucumber popsicles don’t sound too tempting. After all, vegetables usually don’t work well with treats. However, trust us on this. The cucumber popsicles will be your new favorite summer treat thanks to their unique taste and cooling-off properties that are off the charts. Interested in giving them a try? Here is how to make them.

Ingredients:

  • 1 cucumber (unpeeled)
  • 1 cup water
  • ¼ cup lemon juice
  • 1 tablespoon honey (sugar or stevia will do as well)
  • 5 mint leaves

Instructions

  1. Combine cucumber, water, lemon juice, and honey in a blender. Don’t peel the cucumber, as you’ll lose out on flavor.
  2. Blend until you get a smooth mixture. At that point, give it a taste to see whether you are satisfied with the sweetness. If not, add more honey and blend.
  3. Add mint leaves and give them a short spin in the blender until they are finely chopped. Don’t blend too much.
  4. Pour the mixture into molds (or plastic cups) and toss in the freezer for four hours.
  5. Enjoy your cucumber popsicles.
