Craving for Costco Chocolate Muffins? Make Some at Home

Retailer Costco is not only beloved by Americans for its great deals but also for the food it offers. One of the staples of their food offering, besides the iconic $1.5 hot dog and drink combo, is the chocolate muffins. They are cheap, oversized, tasty, and a perfect way to treat yourself after completing your shopping task. But what if you are craving some and are not in the mood for shopping?

Well, thanks to a recipe by chef and New York Times bestselling author Gaby Dalkin, you can now make Costco chocolate muffins at home.

Copycat Costco Chocolate Muffins

Dalkin shared her copycat Costco chocolate muffins recipe on social media last year, and judging by the reactions, everything, from look to taste, is on point.

To make copycat Costco chocolate muffins start by combining 1 cup of granulated sugar, 1/3 cup vegetable oil, two eggs, and one yolk in a bowl. While mixing the ingredients, add 1 tablespoon of vanilla extract.

In a separate bowl, combine ½ cup cacao powder and ½ cup hot water. Whisk until smooth and combine with the rest of the wet ingredients. Add a dry mixture that consists of 1 2/3 cups all-purpose flour, 2 teaspoons baking powder, ½ teaspoon baking soda, 1 teaspoon salt, and ¼ cup cacao powder. Finish off with ¾ cup sour cream and mix until you get a smooth muffin batter. Toss in 2 cups of chocolate chips halfway through.

Spray your muffin tin with cooking spray and divide the batter evenly. Top with more chocolate chips and bake at 375F for 25 minutes for a standard 12-cup or 35 minutes for a jumbo 6-cup.
