Come On and Try Colcannon

St. Patrick’s Day may be long gone, but that doesn’t mean we can’t enjoy some traditional Irish cuisine. Ireland is known for its greenery, and they even like adding it to their mashed potatoes. The result is a dish called Colcannon which can be made using cabbage, kale, leeks, chives, or all of the above!

Ingredients:

  • 5 medium Yukon Gold potatoes, peeled and cut into 2″ pieces
  • 4 scallions, sliced
  • 1 large bunch of kale, sliced into ribbons
  • 2 leeks, sliced
  • 3 cloves garlic, crushed
  • 6 tablespoons butter
  • ¾ cup milk
  • ½ cup heavy cream
  • Kosher salt
  • Freshly ground black pepper

Instructions:

  1. Peel the potatoes and cut them into 1-inch pieces. Place them in a large pot and cover them with water. Season generously with salt. Bring to a boil and cook until the potatoes are totally soft. Drain them and return them to the pot.
  2. Melt 4 tablespoons butter in a large pot. Add the scallions, leeks, and garlic and cook until they begin to soften and smell fragrant. Add the shredded kale, milk, and cream. Cook for around 4 minutes, mixing often until the milk comes to a simmer and the kale wilts.
  3. Use a potato masher to mash the kale mixture into the potatoes until smooth. Season with salt and pepper. Serve topped with more butter and black pepper.
