Brief Guide to Trying New Recipes in Quarantine

Many food lovers decided to start cooking while social distancing and if you haven’t, the return of lockdown might convince you otherwise. It’s a great way to pass the time and get something truly extraordinary in the process, but here’s a couple of things you should consider before giving new recipes a shot.

Patience!

If you have zero cooking experience, there’s no need to push yourself into becoming a pro while social distancing. Take baby steps, start with basic recipes, and work on something more elaborate once you master them.

Personal Favorites

The whole point of cooking in quarantine is doing something you truly enjoy, so you should always opt for making the dishes you love from the bottom of your heart.

Jackson and I made these cupcakes for @frankstewart3's birthday yesterday! They were a BIG hit so I wanted to share the recipe…of course, they are totally grain/refined sugar-free! For a dairy-free option use coconut oil instead of ghee. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Since I haven't worked a lot with cassava flour I search around for one to try…I ended up adapting @glutenfree.followme's Paleo Cupcake recipe. Makes 15-18 cupcakes – depending on how full you make them. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What I've been loving about cassava is how similar the texture is to regular flour! These cupcakes were moist, springy, and fluffy. Jackson devoured his and asked for a second. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ FOR THE CUPCAKES ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 2 cups cassava flour • 1 cup unsweetened almond milk • 3/4 cup coconut sugar • 1/2 cup ghee or coconut oil • 2 eggs • 2 tsp pure vanilla extract • 2 tsp baking powder (I used a grain-free/paleo) • 1/2 tsp pink salt • Cacao nibs (optional topping) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Preheat oven to 375 and line muffin pan with cupcake liners. 2. Combine ingredients in mixer. 3. You a spoon to drop batter into liners. Bake for 18 minutes. 4. Remove from heat and wait to cool before frosting (see recipe below). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ FOR THE FROSTING ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The icing I just used my own coconut cream frosting recipe… ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 2 cans full fat coconut milk • 3 tbsp maple syrup • 1 tbsp raw cacao (optional) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Place the coconut milk in the fridge for at least one hour (preferably longer). 2. Open can and scoop JUST the cream sitting on top of the can. 3. Place in a high-speed mixer. 4. Add maple syrup and mix on high until whipped. Add cacao if using. 5. Wait for cupcakes to cool completely before frosting. (I suggest frosting just before eating or placing it all back in the fridge because the frosting will melt at room temperature).
