Ingredients
- 3 tablespoons water
- 6 small corn tortillas
- 2 tablespoons cilantro, chopped
- 2 tablespoons olive oil
- 1 cup shredded pepper jack cheese
- 6 large eggs
- salt
- 15 ounces black beans
- 1 avocado
- black pepper
- pickled jalapeños
- pickled red onions
- salsa
Instructions
- Preheat the oven to 400°F. Spread the tortillas over a baking sheet and brush both sides of each one with one tablespoon of olive oil. Season with salt.
- Bake the tortillas for 15 minutes, until they look gold and crispy.
- Mash the beans with a fork in a small bowl until only a few chunks remain.
- In another small bowl, mash the avocado and stir in lime juice and cilantro. Season with salt and pepper according to taste.
- Once the tortillas are ready, divide the beans among the tortillas. Top with the shredded cheese.
