Breakfast Tostadas to Get Your Day Off to the Perfect Start

If you’re looking to get your morning off to an ideal start, then a breakfast tostada is perfect for you. This scrumptious and wholesome breakfast tortilla sandwich contains a healthy variety of delicious and nutritious ingredients. Here’s how you can make breakfast tostadas for yourself.

Ingredients

  • 3 tablespoons water
  • 6 small corn tortillas
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons olive oil
  • 1 cup shredded pepper jack cheese
  • 6 large eggs
  • salt
  • 15 ounces black beans
  • 1 avocado
  • black pepper
  • pickled jalapeños
  • pickled red onions
  • salsa

Instructions

  1. Preheat the oven to 400°F. Spread the tortillas over a baking sheet and brush both sides of each one with one tablespoon of olive oil. Season with salt.
  2. Bake the tortillas for 15 minutes, until they look gold and crispy.
  3. Mash the beans with a fork in a small bowl until only a few chunks remain.
  4. In another small bowl, mash the avocado and stir in lime juice and cilantro. Season with salt and pepper according to taste.
  5. Once the tortillas are ready, divide the beans among the tortillas. Top with the shredded cheese.
  6. Bake the tortillas for another 5 minutes until the cheese is melted.
  7. Heat the remaining olive oil in a medium skillet over medium heat. Crack the eggs into the pan and cook for about 3 minutes before adding salt and pepper.
  8. Top tortillas with the eggs, avocado, jalapeños, onions, and salsa and enjoy.
