Breakfast Rice Pudding is the Ultimate Alternative to Oatmeal

Pudding for breakfast?! We know, dessert first thing in the morning may sound like a bit of an odd choice, but hear us out. Products like breakfast cereals are often full of added sugar, and those are eaten daily by many people without a second thought. Even with a bit of maple syrup or honey for added sweetness, the sugar content of this pudding is actually much lower than many breakfast options you’ll find on grocery store shelves. Rice also contains fiber and protein which will help keep you full and prevent your blood sugar from spiking. It’s a great way to enjoy leftover rice if you’ve made too much, or just to mix up your breakfast routine. Here’s one of our favorite recipes:

Ingredients:

  • ⅔ cup of cooked, leftover rice
  • ⅔ cup of your choice of milk, we recommend coconut
  • ½ to 1 tablespoon of sweetener, we recommend maple syrup
  • ¼ teaspoon of cinnamon
  • ⅓ cup of fresh berries, or toppings of choice

Instructions:

  • Add rice, milk, sweetener, and cinnamon to a small saucepan over medium heat.
  • Heat mixture until it bubbles, then reduce heat to low.
  • Cook for 5-7 minutes, until liquid has thickened.
  • Remove from heat and serve with berries, adding more sweetener if desired.
  • Enjoy!
