Best Ways to Put Your Leftover Pumpkin Puree to Some Good Use

If you can’t get enough of pumpkin desserts this fall, you’ve probably found yourself dealing with leftover pumpkin puree more than once. Instead of throwing it away, here’s how you can save it for later and use it in some delicious foods and beverages.

Drinks and Spreads

Pumpkin puree can be used as the main ingredient in many popular drinks—including pumpkin spice latte, milkshakes, and smoothies. You can also use it as a spread in your pancakes or add it to your oatmeal each morning.

PLANT BASED PUMPKIN CREPES! 🌱🎃😱 Pazzesco, eh?! Oggi insieme agli amici di #italianvegantribe abbiamo pensato di proporvi delle ricette dal colore arancione, così mi sono sbizzarrita! 🍀 In autunno ho sempre un po' di zucca che mi avanza…in questo caso era un pochino di polpa della delica che avevo nuovamente cotto in forno. Che faccio, non ti lascio il procedimento?! Eccolo ➡️ circa 60gr di farina di tuo piacimento, 30gr zucchero di canna integrale o dolcificante a tua scelta, 1 cucchiaio l'olio di cocco o semi, 130 gr di latte vegetale, 2 cucchiai di purè di zucca (basta frullare la polpa col mini pimer, in America vendono il pumpkin puree anche in barattolo! 😱) Insomma deve venire di consistenza crepes! Se per qualche ragione dovesse venirti troppo liquida un pizzico di maizena e ci siamo! Se gradite potete aggiungere un poco di zenzero in polvere @italpepesrl ! E la cosa meravigliosa è che verranno arancioni anche senza utilizzare l'uovo! Mescola il tutto con una frusta a mano, utilizza una padella antiaderente e versa man mano il composto aiutandoti con un cucchiaio per livellarla fino ai bordi della padella, girala delicatamente e poi impilale e farcisci a tuo gusto! Io homemade cioccolata e granella di nocciole! Freeze It For Later

You can store leftover pumpkin puree in your refrigerator for up to a week. Freezing is also an option if you’re not going to be able to use it within that time. You can seal it up in an airtight container or a bag, or store it an ice cube tray or muffin tin.

Make your own 🥧 PUMPKIN PURÉE 🥧 to use in pumpkin pie and other pumpkiny fall recipes✨⁣⁣⁣ ⁣⁣⁣ I know canned pumpkin isn’t available in a lot of places (like Copenhagen). But it’s honestly super easy to make so it’s ok! Even if you do have canned pumpkin wherever you are, it’s healthier to make it fresh since most aluminum cans today are still being lined with BPA resin.⁣ ⁣⁣ What you’ll need:⁣⁣⁣ 🌙 4-5 pound sugar pumpkin (hokkaido works great too)⁣⁣⁣ 🌙 pinch of salt⁣⁣⁣ ⁣⁣⁣ How to make it:⁣⁣⁣ 1. Slice the pumpkin in half and scoop out the seeds.⁣⁣⁣ 2. Place both halves face down on parchment paper on a baking sheet.⁣⁣⁣ 3. Bake for 45-60 at mins 375 degrees F or 250 C.⁣⁣⁣ 4. Scrape out the inside (remove the skin) and blend in a food processor or with a hand blender. Add a dash of water if needed.⁣⁣⁣ ⁣⁣⁣ If you want to use it as a spread, feel free to add a nut butter, classic fall spices (cinnamon, nutmeg, ginger, and cloves), and dates/coconut sugar/maple syrup to sweeten it.⁣⁣ ⁣⁣⁣ 🎃 Tip: Check the ripeness before picking a pumpkin. It’s probably ripe if it’s uniform in color but give it a lil knock and see if it makes a hollow sound. If it does then you’re good to go!⁣⁣⁣ ⁣⁣⁣ Did you know that pumpkins are loaded with vitamin A and antioxidants? They help fight free radicals in the body and protect the cells from damage. This makes it ok to eat all the pumpkin pie right?! 😬🍂
