Whether you eat meat or not, a black bean burger is a super yummy treat to have, especially at parties or cookouts. They’re really easy to put together and since they are vegetarian, you can make everyone happy. But even though they don’t have meat in them, they’re still really filling and much healthier than normal burgers.

Ingredients

  • 1 can of black beans
  • 1/4 of bell pepper
  • 1 garlic clove
  • 1/4 of an onion
  • 1 egg
  • 1/4 cup of bread crumbs

* If you don’t have bread crumbs or want to make it healthier, substitute ground oatmeal or quinoa!

Instructions

  1. Mash the black beans so that they’re mostly smooth, but there are still some whole ones in there.
  2. Add in finely diced onions, garlic, and bell peppers and mix well.
  3. In a small bowl, crack the egg and add in whatever seasoning you like such as hot sauce, chili powder, cumin, and definitely salt and pepper.
  4. Pour that into the bowl and mix well.
  5. Finally, add in the bread crumbs and after you mix, start to form patties.
  6. Place the patties in the freezer for 30 minutes, and then take them out, fry them on each side for a few minutes, and you’re ready to eat!

Anything with corn is usually a good indication that it’s a comfort food, and this spoon bread recipe is no different. Similar to corn bread, this spoon bread is less like a bread and more like a pudding, but is all delicious just the same.

Instructions

  1. Start by heating up 3 cups of 2% milk on the stove until heat bubbles form around the pot.
  2. While that cooks, combine 1 cup of 2% milk with 1 cup of cornmeal, 3 teaspoons of sugar, and 1 teaspoon of salt, and mix until smooth.
  3. Pour the cornmeal mixture into the hot milk and whisk constantly until it comes to a boil. Reduce the heat and cook for 5 more minutes, still whisking constantly.
  4. Take it off the heat and add 1/2 teaspoon of baking powder as well as 2 tablespoons of butter to the mixture. Stir to incorporate.
  5. In another small bowl, beat three egg yolks and add a little bit of the cornmeal mixture into temper it. Then, add the whole mixture to the cornmeal.
  6. Whip the 3 egg whites until stiff peaks form and then fold in 1/4 of the egg whites into the cornmeal. Once that’s incorporated, add in all the egg whites.
  7. Transfer the mixture to a baking dish and cook for 40-45 minutes at 350F and enjoy!
