The Tools You Need

In order to cook the chicken more evenly, place a roasting rack in your roasting pan, letting air circulate freely under the chicken. This way the chicken isn’t roasting in its juices which means crispier skin. You also need an instant-read meat thermometer so you can check that your chicken is cooked all the way through.

Flavoring Your Chicken

You don’t need much to flavor a chicken, you can make it simple with salt, pepper, and butter, but if you are looking for something more then start building on these basic ingredients. Chop up some fresh herbs and mix them with some putter to put under the chicken skin. You can put some onions inside the chicken with some garlic or even lemons and oranges to give some extra citrus flavor. You can also use dry rub which is a blend of ground dried spices and rub them under the chicken’s skin and inside the cavity.

How to Roast

There are two ways to roast a whole chicken; the first way is the regular heat method, preheat the oven to 350 degrees F and roast the chicken for 20 minutes/pound plus 15 additional minutes. Or the high heat method, preheat the oven to 450 degrees F and cook the chicken for 10-15 mins, then reduce the temperature to 350 degrees F and roast for 20 minutes/pound.
