3 Common Mistakes You’re Probably Making When Cooking Mushrooms

Mushrooms are a staple of many cuisines and they can be combined with a long list of different ingredients, but that doesn’t necessarily mean everyone knows how to cook them. If you’re still new to this process, here are some mistakes you should avoid at all costs.

Wash Them… or Not?

Some people can’t imagine cooking mushrooms before washing them, while others prefer skipping this step and simply removing the dirt instead. If you decide to wash the mushrooms, keep in mind they’ll get waterlogged so it’s important to let them dry properly.

Mushroom risotto 🤎 since summer seems to be taking a break I’m craving all the comfort foods and mushroom risotto is one of my favourites. My version is easy to make and much lighter than most because it contains no butter, cream or cheese. But it’s still full of flavour thanks to the mushroom stock and all the herbs. Today I also made some cep mushrooms which were amazing! Kindly gifted from @farm_directuk I just cooked them in a little olive oil then added some fresh lemon and salt. ⁣ INGREDIENTS ⁣ 🔸600g mushrooms, chopped (I used half chestnut and half white) ⁣ 🔸2 cups arborio rice ⁣ 🔸2 cloves garlic, grated ⁣ 🔸1 mushroom stock cube ⁣ 🔸3 tbsp extra virgin olive oil ⁣ 🔸1/3 cup chopped parsley ⁣ 🔸1 tbsp fresh thyme ⁣ 🔸Vegetable stock, kept warm ⁣ 🔸1 teaspoon salt ⁣ 🔸Freshly ground pepper ⁣ 🔸Optional extra: grated Parmesan⁣ METHOD ⁣ 🔸Heat the oil in a large pan and add the mushrooms. Cook them for about 15 minutes till they reabsorb most of the water they release⁣ 🔸 Add the mushroom stock cube and dissolve into the mushrooms ⁣ 🔸Add the rice and mix well⁣ 🔸Start adding the vegetable stock one cup at a time and make sure you stir continually ⁣ 🔸When the stock has been fully absorbed, add the next cup of stock. ⁣ 🔸After you’ve added 3 / 4 cups of stock, add the herbs & stir into the rice. ⁣ 🔸Keep adding stock till the rice is fully cooked but still al dente. I used five cups of stock. ⁣ 🔸Season and serve immediately.

Just Add Oil

You shouldn’t be skimping on oil, butter, or other fats you’re using throughout the cooking process. Mushrooms will soak them up quickly, so it’s a good idea to add them in small doses along the way.

Maple Balsamic Mushrooms 🍄—delicious as a side, on toast, with salads, or as is! I simply sautéed fresh button mushrooms and seasoned them with balsamic vinegar and maple syrup (of course) along with a few other really basic ingredients. ✨ Share this with someone who loves mushrooms! Slice the mushrooms into half 2. Heat a non-stick pan. Once hot, add in 3 tbsp olive oil. Add the onions and sauté over medium heat until tender, 4-5 minutes. Add in the garlic and sauté for another 2 minutes. Add in the mushrooms.  3. Cook over medium heat for 4-5 minutes, mixing occasionally. Pour in the balsamic vinegar. Leave to cook for another 5-6 minutes. Once the mushrooms are cooked, add in the maple syrup and mix well. Add a pinch of salt and then add in the chopped rosemary. Turn off heat. 4. Drizzle some more olive oil, if desired. Turn Up the Heat

Low heat will do no favors to your mushrooms, because the water will seep out along the way, and they’ll sauté instead of being properly cooked. Using medium-high or high heat will allow water to evaporate and the final product will be much more delicious this way.
