If you have a special place in your heart for avocados, guacamole is probably your favorite dip on the market. There are many commercially produced options out there, but making your own is a much better idea—as long as you avoid making these three common mistakes.

Avocado Choice

The type of avocados you’re using can make or break your guacamole. If your avocados are not ripe enough, don’t even bother making this dip. Look for the ripest avocados that you can find or consider buying them in advance and allow them to ripen and soften up at room temperature for a few days.

Tasting Technique

You’ll probably be tempted to taste your guacamole along the way—and you should—but definitely not with a spoon. Consider using tortilla chips to taste your guacamole. After all, you’ll be eating them as a combo, and this tasting technique will help you avoid over-salting your guac.

Ahead of Time

Some dishes can benefit from being prepared ahead of time, but guacamole isn’t one of them. It will brown pretty quickly, so it’s best to make it right before serving it. It’s always a good idea to squeeze some lime over the top to keep it fresh for longer.
