Pasta has been a staple in the diets of many cultures for hundreds of years. Because of its versatility and affordable price, it’s now enjoyed as part of countless dishes all over the world. While most pasta is made with just a few simple ingredients, cooking it well can actually be a bit tricky. Factors such as cooking time and water temperature have the potential to make a significant difference in how your dish turns out. Luckily, with the right knowledge, it’s easy to achieve perfect pasta every single time. Here are a few tips we’ve found most helpful.

Consider the quality

Choosing the right pasta can make a big difference in your final dish. Pasta made with high-quality ingredients will cook more evenly, have a better texture, and absorb sauces more effectively than cheap pasta. Look for pasta made with semolina flour, which is made from a high-protein wheat called durum.

Boil & salt your water

Pasta that sits in water that isn’t hot enough will often develop a gummy and sticky texture, so check that your water is at a rolling boil before adding the pasta. Use a ratio of 4-6 quarts of water per pound of pasta to ensure there’s enough room for the pasta to cook evenly. For every 4-6 quarts of water, add 1 tablespoon of salt.

Don’t rinse

Starchy water helps sauce to stick to the surface of cooked pasta, so it’s best to avoid rinsing your pasta whenever possible. Instead, use a slotted spoon or strainer to remove it from the water and transfer it to your sauce or serving dish immediately.
