This Vegan Quinoa Salad is a Great Way to Get in Your Protein

As a vegan, there are two things you probably think about a lot: salad and protein. Salad because it’s one of those things that vegans just eat a lot of (after all, you gotta get your veggies in somehow) and protein because plant-based eaters are always searching for ways to make sure their meals offer adequate protein.

Well, the recipe we’re offering you today is a perfect combination of both of these things. It’s a vegan salad with plenty of protein from the quinoa, plus enough satiating ingredients to actually keep you full. Here’s how you can make it.

Ingredients

  • Water
  • Salt
  • Pepper
  • Quinoa
  • Spinach
  • Cucumber
  • Tomatoes
  • Avocado
  • Lemon
  • Olive oil

Directions

First, cook the quinoa according to the package’s instructions. It’ll probably involve bringing water with a pinch of salt to a boil, adding the quinoa, covering, and simmering until the water is absorbed. Let it sit to cool down and then fluff it with a fork. Then go ahead and refrigerate it until it cools down even more.

Once the quinoa is chilled, add spinach and chopped cucumber, tomatoes, and avocado. Mix to combine. Dress with lemon juice, olive oil, salt, and pepper to taste. Mix it up thoroughly and enjoy!
