This Potatoes and Eggs Dish is a Great Dinner Idea

YouTube channel Lieblingsrezepte recently showcased a quick potatoes and eggs dish that doesn’t require much work but rewards you with a satisfying and delicious meal. So let’s check it out!

Ingredients

  • 3 potatoes
  • 3 eggs
  • 5 slices of cheese
  • ¼ cup chopped parsley
  • Salt, black pepper, and paprika to taste

Instructions

1. Peel the potatoes and then grate them into thin strips using a grater or a peeler.

2. Submerge the potato strips into a bowl of cold water and let them bathe for several minutes.

3. Combine parsley, eggs, salt, black pepper, and paprika into a bowl. Give it a good whisk and then add the potato strips. Mix thoroughly.

4. Cover the bottom of a pan with olive oil and place it on medium heat. Melt a small piece of butter and then add half of the potatoes and eggs mixture. Spread it evenly and add cheese slices. The original recipe asks for mozzarella cheese, but you can use some other kind if you prefer or if you don’t have mozzarella around.

5. Add the remaining half of the potatoes and eggs mixture, spread evenly across the pan, and add salt and to taste. Cook for 10 minutes with the lid on and then flip. Cook for another 10 minutes. 

6. Transfer to a plate, slice it, and dig in!
