This Polish Food Blogger is Giving New Life to His Grandmother’s Recipes

When most people think of European cuisine, Italian or French food comes to mind. They’re popular and quite frankly, delicious, especially when prepared with high-quality ingredients. But did you know Poland is home to some spectacular cuisine as well? Michał Korkosz is a Polish food blogger who’s giving new life to his family’s old recipes. He takes classic dishes and adds his own modern, vegetarian twist to create something new and exciting that’s still true to the Polish palate. Most of his posts are written in Polish, but he does have a blog with some recipes in English from one of his cookbooks. Here are a few of our favorites:

Pierogi Ruskie

What’s more Polish than Pierogi? Michał’s version takes a classic potato and cheese filling and spices it up a bit with a kick of black pepper and some caramelly brown butter. We’re drooling at the sound of it.

Breakfast Apple Cake

There’s no shame in eating cake for breakfast, especially this apple cake. Sweetened with honey and drizzled with a little oil, it’s a Polish delight you can enjoy any time of day.

White Bean Spread

According to Michał, Poles love onions, so he’s added lots of them to this bean spread. A bit of rosemary, and topped on some toast you’ve got a snack that’s a chef’s kiss.
