This is the Best Roast Chicken You’ll Ever Make

There is nothing quite as classic as a roast chicken. When done right, the meat will be moist, the skin crispy, and your guests super happy! Every chef seems to have their own version of the perfect roast chicken, but this buttery, herb edition is ours.

Ingredients:

  • 1 whole chicken
  • 50 grams unsalted butter
  • 2-3 garlic cloves, minced
  • 1 bunch fresh parsley 
  • 1 bunch fresh basil
  • 1 bunch fresh coriander
  • Lemon zest
  • Salt and pepper

Instructions:

  1. Rinse and finely chop your herbs. In a bowl, combine them with the butter, minced garlic, lemon zest, salt, and pepper.
  2. Using your fingers, carefully lift the chicken skin off the breasts and thighs to make a small pocket in which you will insert ⅘ of the butter, being careful not to tear or cut it.
  3. Massage the remaining herb butter all over the chicken to soften and grease it.
  4. Place the chicken in an ovenproof dish and cover with tin foil.
  5. Cook at 350 F for 1 hour 30 minutes (possibly a little more), basting the chicken around every 20 minutes
  6. Half an hour before the end, remove the aluminum foil and return to the oven to achieve a crispy skin.
