This Icelandic Chicken Soup Will Have You Dreaming of the Northern Lights

Iceland isn’t at the top of everyone’s culinary bucket list, but we’re considering booking a ticket after hearing about this soup. Most Icelandic dishes include fish, with cod, haddock, salmon, herring, and halibut all popular proteins. As the name states, however, this soup relies on chicken as its main ingredient, serving it in a creamy tomato broth.

Ingredients:

• 2 red peppers
• 1 green pepper
• 7 cloves of garlic
• 1 white onion
• 4 tomatoes
• 2 tablespoons of olive oil
• 1 quart of chicken broth
• 1 can of coconut milk OR ¼ cup of cream
• 5 chicken thighs / 2 x large breasts
• 1 teaspoon of paprika
• 1 pinch of red pepper flakes
• 1 pinch of salt

Instructions

  1. De-seed and chop one of the peppers into large pieces. Peel the onion and chop it into eights. Add the tomato, onion, red pepper, garlic, sea salt, and olive oil to a cast iron baking pan.
  2. Bake the vegetables at 400F for 30 minutes. Broil for the last few minutes to get a brown crust on top.
  3. In a large pot, bring the coconut milk and chicken broth to a simmer. Add your roasted vegetables and blend until creamy.
  4. Add the chicken and let it cook for 10 minutes. Remove the chicken, shred it, and add it back to the soup before seasoning.
