This Edamame Salad is So Tasty and Fresh

How we love soybeans! They are smooth, tasty, crunchy, and retain a great texture even after a few hours in the fridge. In the summer, you can make a delicious edamame salad easily and quickly, which will make a great addition to any lunch or picnic. You can follow the recipe or add/omit ingredients according to your personal taste and what you have in the fridge or pantry that day. This salad goes great alongside a fish dish and a glass of white wine, or as a quick snack alongside a cold beer.

Ingredients:

  • 2 cups of peeled and washed edamame beans
  • 1 bunch of coriander or parsley
  • 2 finely chopped red onions
  • 8 tablespoons lime juice or lemon juice
  • Salt
  • Black pepper
  • 1 clove crushed garlic

Instructions:

  1. Cook the edamame beans for 3-4 minutes in boiling water, strain, and rinse immediately with cold water.
  2. Add the onion, coriander or parsley, garlic, and lemon, and season with salt and pepper to taste.
  3. Put it in the fridge for an hour before serving it.
