In the summer, you can make a delicious edamame salad easily and quickly, which will make a great addition to any lunch or picnic. You can follow the recipe or add/omit ingredients according to your personal taste and what you have in the fridge or pantry that day. This salad goes great alongside a fish dish and a glass of white wine, or as a quick snack alongside a cold beer.
Ingredients:
- 2 cups of peeled and washed edamame beans
- 1 bunch of coriander or parsley
- 2 finely chopped red onions
- 8 tablespoons lime juice or lemon juice
- Salt
- Black pepper
- 1 clove crushed garlic
Instructions:
- Cook the edamame beans for 3-4 minutes in boiling water, strain, and rinse immediately with cold water.
- Add the onion, coriander or parsley, garlic, and lemon, and season with salt and pepper to taste.
- Put it in the fridge for an hour before serving it.
