Is there anything better than a good samosa? Crispy on the outside, soft on the inside, fragrant, and flavorful, this Indian snack is one of those foods we could easily live off of. You might assume making them at home is hard because they’re deep-fried, but this recipe is here to prove that you can totally make samosas. Here’s how.

Ingredients:

  • Potatoes
  • Oil
  • Onion
  • Green peas
  • Curry powder
  • Chili powder
  • Sugar
  • Salt
  • Egg
  • Spring roll wrappers

Instructions:

  1. First, prep your filling. Peel and boil potatoes until fully cooked through. Drain and cool them. Once they’re cool, mash them up roughly. Mash your peas too. Dice your onion.
  2. Cook the filling by heating oil over medium heat. Add the onions and sautee until soft. Add the potato and peas, curry powder, chili powder, sugar, and salt. Cook for 5 to 10 more minutes.
  3. Cut your spring roll wrappers into triangles, filling each triangle with the cooked (and cooled) filling. Brush the edges of the wrapper with egg white, fold over, and pinch the edges until sealed. Repeat until all your filling is used up.
  4. Deep fry your samosas at 350 F until golden brown and crispy. Remove from the oil and let cool and drain on a plate lined with paper towels. Enjoy!
