This Creamy Turnip Soup Will Keep You Warm on Cold Days

Winter is coming, so every household is transitioning to warm meals that can warm up one’s soul and body. And it doesn’t get better than a warm bowl of soup to get this job done.

If you are looking to expand your cooking arsenal for the upcoming winter, make sure to include this creamy turnip soup. It’s one of those soups that you’ll keep coming back to over and over again.

Ingredients:

  • 3 turnips
  • 1 yellow onion
  • 1 apple
  • 4 cups chicken stock
  • ½ cup heavy cream
  • 2 tablespoons white vinegar
  • 2 tablespoons horseradish
  • salt and black pepper

Instructions:

  1. Wash the turnips, clean and slice them into small cubes. Do the same with the apple and onion.
  2. Combine in a pot and add chicken stock. Let it boil.
  3. After boiling, bring down the heat and let it cook for 30 minutes. In the meantime, combine cream and horseradish in a separate bowl.
  4. Remove the soup from the stove and let it cool off. Blend the soup using an immersion blender until you get a uniform and smooth consistency. 
  5. Add heavy cream, white vinegar, salt, and black pepper to taste. Cook for 10 more minutes on low heat, letting the soup simmer and stirring frequently.
  6. Take off the stove, serve in a bowl while warm, and enjoy.
