Holiday time is party time! With guests coming over, you have to give them something to nibble while they sip their drinks and mingle. Onion dip is always a winner, but this caramelized version totally improves upon the classic!
Ingredients:
- 2 tablespoons unsalted butter
- 2 tablespoons vegetable oil
- 2 large yellow onions, thinly sliced
- ½ cup cream cheese
- ½ cup sour cream
- 1/3 cup mayonnaise
- 2 tablespoons sliced chives
- Kosher salt
- Freshly ground black pepper
Instructions:
- Melt the butter in a large skillet over medium heat. Swirl in the oil and add the onions and ½ teaspoon of salt. Stir occasionally as the onions begin to break down and soften.
- After 10 to 12 minutes, reduce the heat to medium-low and allow to cook until they become golden and deeply caramelized (around 40 to 55 minutes).
- Once done, transfer the onions to a bowl and let them cool completely.
- Stir in the cream cheese, sour cream, and mayonnaise. Season with salt and pepper and top with chives. Serve with chips and crackers.
