Ingredients:
- 2 to 3 medium very ripe bananas, peeled
- 1/3 cup unsalted butter, melted
- 1/2 teaspoon baking soda
- 1 pinch salt
- 1/2 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 12 ounce bag of chocolate chips
Instructions:
- Preheat the oven to 350 F and line a muffin tin with muffin cups.
- In a big bowl, mash the ripe bananas with a fork until they’re smooth.
- Stir in the melted butter.
- Mix in the baking soda and salt.
- Stir in the sugar, egg, and vanilla extract.
- Mix in the flour.
- Mix in the chocoalte chips.
- Pour the batter into the muffin cups. Bake between 20-25 minutes at 350 F, or until a toothpick comes out of the center clean. Some chocolate on the toothpick is normal.
- Let the muffins cool for a few minutes before serving.
