This chocolate cappuccino muffin recipe won’t just satisfy your taste buds, it’ll also keep you awake long enough to tell the tale! Here’s how to make it.

Ingredients

  • 1 package chocolate chips
  • 2 cups flour
  • 1 1/3 cups sugar
  • 2/3 cup canola oil
  • 3 eggs
  • 2/3 cups water
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 5 teaspoons of coffee dissolved in 2 teaspoons of hot water

Instructions

  • Start off your journey to cappuccino heaven by preheating your oven to 350 degrees F. Take a pan with 12 muffin holders and grease them with non-stick spray.
  • Pour your chocolate chips into a food processer and chop them into small bits. In the food processer, add the flour, dissolved coffee, baking powder, sugar, eggs, oil, water, and vanilla. Mix up the whole enchilada until you have yourself a smooth consistency.
  • Pour the batter into the open muffin cups, so that each cup is about three-fourths full. Bake in the preheated oven for approximately 20 minutes. When they look nice and fluffy, take them out and you’re done! Serve warm and with a glass of cold milk.
