If you’re sick, there’s probably one food you’re really craving to warm you up inside and give you some much-needed comfort: chicken noodle soup. But if you’re vegan, you may have written that off as an option. Thankfully, we’re here to save the day with a chicken noodle soup recipe that is 100% plant-based. Check it out below.

Ingredients

  • Carrots
  • Celery
  • Onion
  • Garlic
  • Potatoes
  • Water
  • Vegan bouillon cubes
  • Thyme
  • Salt
  • Nutritional yeast
  • Noodles of your choosing

Directions

  • Dice your carrots, celery, onion, and potatoes, and mince your garlic.
  • Bring six cups of water to a boil in a large pot. Add the bouillon cubes, thyme, salt, and nutritional yeast. Stir until dissolved.
  • Add the garlic, carrots, celery, onion, and potatoes. Stir and bring to a boil again. Then turn down the heat, cover, and simmer for ten minutes, or until the potatoes and carrots are starting to get tender. They should be at your desired tenderness in about ten more minutes.
  • Add the pasta and bring the soup back to a boil. Cook for ten more minutes until the pasta is tender and the veggies have reached your desired softness.
  • Taste the soup and add more seasoning to taste.
  • Serve and enjoy!
