Make Spicy Pangrattato Risotto With Your Stale Bread

There are many things you can use stale bread for, but this risotto recipe by Jamie Oliver might make you want to buy a ciabatta just to let it go stale. This recipe serves 8.

Ingredients:

  • basic Risotto made immediately before, resting in a saucepan, covered
  • Zest of 1 lemon
  • 3 dried Thai chilies
  • 4 garlic cloves, peeled
  • 6 fillets of salted anchovy in oil (you can get them in a tin or a jar in the deli)
  • ½ stale loaf ciabatta, cut into chunks
  • some olive oil

Instructions:

  1. Put the bread, garlic, chilies, and lemon zest in a food processor with some anchovy oil.
  2. Blend until you get a crumble, that’s going to be the pangrattato.
  3. Heat up a bit of olive oil in a large frying pan and fry the pangrattato until crispy and brown.
  4. Cool on some kitchen paper to soak the oil.
  5. Taste the risotto and add black pepper and Parmesan if necessary.
  6. Serve the risotto and add a thin layer of pangrattato to cover it.
