Lettuce Cups Are a Light, Breezy Summer Snack

Are you looking for a light, healthy snack that requires no cooking and can be made in a matter of minutes? Lettuce cups are all that, and they’re filled with all your favorite tasty veggies.

This delicious, no-fuss recipe was shared by Forks Over Knives, and it will make you see romaine lettuce in a whole new light. The original recipe includes a long list of veggies, including cherry tomatoes, roasted corn, and jalapeño peppers, but you can get creative with the ingredients and add some of your favorites to the mix.

Ingredients:

  • 2 cups frozen roasted corn, thawed
  • 1 (15-ounce) can no-salt-added black beans, drained and rinsed (or 1½ cups cooked)
  • 1 chopped mango
  • 1 cup cherry tomatoes, halved
  • ½ cup jarred roasted red bell peppers, chopped
  • ¼ cup coarsely snipped fresh cilantro
  • 1 fresh jalapeño pepper, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon grated lime zest
  • 3 tablespoons fresh lime juice (from 2 limes)
  • sea salt
  • ground black pepper
  • 12–16 leaves from romaine lettuce hearts
  • ½ avocado, diced

Instructions:

  1. Combine all the ingredients in a medium bowl, apart from romaine lettuce hearts and avocado. Use salt and pepper for seasoning.
  2. Add the mixture onto the lettuce leaves with a spoon, and use avocado slices for topping.
