Air fryers are a great tool for those of us who love a crispy coating on our food, but don’t want to eat all the oil that deep-frying requires. Who doesn’t love an easy and delicious recipe for the air fryer? Zucchini chips are a great snack or side dish, as they are a healthier treat that still gives that nice crunch! Plus, they pair well with many sauces—we recommend dipping them in tzatziki for a nice Mediterranean flavor. Here’s how to make super crispy zucchini chips in the air fryer!

Ingredients:

  • 1 zucchini, sliced
  • 1 egg
  • 1 cup bread crumbs (we recommend panko bread crumbs)
  • Kosher salt (to taste)

Instructions:

  1. Whisk the egg and put it on a plate. Pour bread crumbs on a separate plate.
  2. Dip one slice of zucchini into the egg first, and then coat with bread crumbs.
  3. Repeat Step 2 for each slice of zucchini.
  4. Place coated zucchini slices in the air fryer in a single layer. Cook at 350 degrees for 7-10 minutes on each side, or until golden brown.
  5. Remove zucchini chips from the air fryer and sprinkle with kosher salt, to taste. Pair these crunchy zucchini chips with your favorite dip or sauce!
