Get the Best of Both Worlds with Nadia’s Healthy Kitchen’s Chickpea Avocado Toast

Ingredients

Spicy Chickpea

  • 1 can chickpeas, drained and rinsed
  • 1 small garlic clove, crushed
  • 1/2 tsp chili powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1 tsp paprika
  • 1 tbsp of oil
  • lemon juice
  • salt and pepper

Mashed Avocado

  • 1 ripe avocado
  • lemon juice
  • salt
  • sliced bread of choice
  • chili flakes (optional)

Instructions

  1. Add oil to a frying pan, and heat it up over medium heat, before adding garlic and chickpeas. Cook them for a couple of minutes before adding spices and lemon juice to the pan. Season them with salt and pepper and let them cook for about 2-3 minutes.
  2. Mash the avocado in a small bowl, before mixing them with lemon juice and a pinch of salt. If you want to give the spread some extra spice, add chili flakes to the mix.
  3. Toast the bread of your choice, spread the avocado mixture over each slice, and top them with the chickpea combo.
