Red velvet is such a great flavor, and making them in cookie form is even better! Get all the richness in a small bite with these gorgeous red velvet crinkle cookies.
Ingredients:
- 2 1/4 cups of flour
- 1/3 cup of cocoa powder
- 1 1/2 teaspoons of baking powder
- 1/4 teaspoon of salt
- 1/2 cup of softened unsalted butter
- 2 oz of softened cream cheese
- 1 1/2 cups of sugar
- 2 large eggs
- 1 1/2 to 2 teaspoons of red food dye
- 1 teaspoon of vanilla extract
- 1/2 cup of powdered sugar
Instructions:
- Whisk together the flour, cocoa powder, baking powder, and salt.
- On medium speed, mix the butter and cream cheese together in the bowl of a stand mixer.
- Then, add in the sugar and cream until light, about 1-2 minutes.
- Crack the egg into a small bowl to avoid getting shell in the mixture, and add it to the stand mixer along with the food dye, and vanilla extract. Mix for a couple more minutes.
- Put the speed to low and add in half the dry ingredients. Once mixed, add the other half.
- Cover the bowl and chill for 4 hours.
- Scoop out the dough, roll in powdered sugar, and place on baking sheet 1 inch apart.
- Bake at 350 F for 9-11 minutes, cool on a cooling rack, and enjoy!
