Soup is one of the best meals to make. It’s so easy to throw a load of ingredients together and create a delicious broth that is comforting and soul-soothing. This soup is based around beans and cabbage for a hearty, creamy dish that is packed full of goodness. This soup can be doubled to cook a large batch to freeze some for another day. This recipe provides four servings. 

Ingredients:

  • 1 white cabbage
  • 1 can butter beans
  • 1 can of borlotti beans
  • 1 large brown onion
  • 4 cloves garlic
  • 2 cups vegetable stock
  • 2 tablespoons soy sauce
  • 1 tablespoon white wine vinegar
  • 1 tablespoon dried thyme
  • ½ tablespoon dried coriander
  • Salt and pepper to taste

Instructions:

  1. Finely slice the onion, cabbage, and garlic.
  2. Heat some oil in a large pot and add the onion. Gently fry for 5-10 minutes and then add the cabbage, thyme, coriander, salt, and pepper. 
  3. Fry for a further 10 minutes and then add the garlic and fry for another 5 minutes.
  4. Drain and rinse the beans and add them to the pot. Cook for 5-10 minutes and then add the veg stock, soy sauce, and vinegar. 
  5. Increase the heat and leave to simmer for 15-20 minutes, stirring occasionally.
  6. Remove from the heat and blend until smooth with a stick blender. 
  7. Return to the heat for a further 5-10 minutes before serving.

This chilled, tomato-based soup hails from the Andalusian region of Spain and will be a delectable escape from the heat all summer long. Gazpacho is rich in flavors yet light on the palate. Paired with crispy, aromatic garlic bread, it makes for an unbeatable combo. 

Ingredients:

  • 6 ripe tomatoes, peeled and chopped
  • 1 cucumber, peeled, seeded, and chopped
  • 1 bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and minced (optional)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups tomato juice
  • Fresh basil leaves for garnish

Instructions:

  1. In a large bowl, mix the tomatoes, cucumber, bell pepper, red onion, garlic, and jalapeño (if using). 
  2. Take about half of the vegetable mixture and transfer it to a blender or food processor. Add the olive oil, red wine vinegar, salt, and black pepper. Blend until smooth. For a chunkier texture, pulse briefly.
  3. Pour the blended mixture back into the bowl with the remaining chopped vegetables. Add the tomato juice and stir well to combine. Cover and refrigerate for at least 2 hours, or overnight.
  4. Serve the gazpacho cold, garnished with fresh basil leaves and garlic bread on the side.

Here’s how to make it.

Ingredients:

  • 4 cups of vegetable broth
  • 2 cups of water
  • 2 packs of ramen noodles (discard the seasoning packets or save for another use)
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 2 cloves of garlic, minced
  • 1 cup of sliced shiitake mushrooms
  • 2 cups of baby spinach
  • 2 green onions, thinly sliced
  • Optional toppings: sliced tofu, boiled eggs, nori seaweed, sesame seeds, chili oil

Instructions:

  1. In a large pot, bring the vegetable broth and water to a boil over medium-high heat.
  2. Add the soy sauce, miso paste, sesame oil, grated ginger, and minced garlic to the pot, stirring to combine. Let the broth simmer for a few minutes to allow the flavors to meld together.
  3. Add the sliced shiitake mushrooms to the pot and let them simmer until they’re softened, about 5 minutes. While the mushrooms are cooking, prepare the ramen noodles according to the package instructions. Drain and set aside.
  4. Once the mushrooms are softened, add the baby spinach to the pot and stir until wilted. Divide the cooked ramen noodles among serving bowls and ladle the hot broth and vegetables over the noodles.

  • 2 celery stalks, diced

  • 1 pound of ham hock or leftover ham bone
  • 1 pound of dried split green peas, rinsed and drained
  • 8 cups of chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions”

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  2. Add the ham hock or leftover ham bone to the pot, along with the dried split green peas and chicken or vegetable broth. Bring the soup to a boil, then reduce the heat to low and simmer, partially covered, for 1½ to 2 hours, or until the peas are tender and the ham is falling off the bone.
  3. Once the soup is cooked, remove the ham hock or bone from the pot and set it aside to cool slightly. Using an immersion blender or regular blender, carefully blend the soup until smooth and creamy, adjusting the consistency with additional broth if needed. While the soup is blending, remove any meat from the ham hock or bone and chop it into bite-sized pieces. Discard any excess fat or gristle.
  4. Return the chopped ham to the pot and stir to combine. Season the soup with salt and pepper to taste. Ladle the soup into bowls, garnish with fresh chopped parsley if desired, and serve hot. Enjoy!

Soup is one of the best meals to make. It’s so easy to throw a load of ingredients together and create a delicious broth that is comforting and soul-soothing. This soup is based around beans and cabbage for a hearty, creamy dish that is packed full of goodness. This soup can be doubled to cook a large batch to freeze some for another day. This recipe provides four servings. 

Ingredients:

  • 1 white cabbage
  • 1 can butter beans
  • 1 can of borlotti beans
  • 1 large brown onion
  • 4 cloves garlic
  • 2 cups vegetable stock
  • 2 tablespoons soy sauce
  • 1 tablespoon white wine vinegar
  • 1 tablespoon dried thyme
  • ½ tablespoon dried coriander
  • Salt and pepper to taste

Instructions:

  1. Finely slice the onion, cabbage, and garlic.
  2. Heat some oil in a large pot and add the onion. Gently fry for 5-10 minutes and then add the cabbage, thyme, coriander, salt, and pepper. 
  3. Fry for a further 10 minutes and then add the garlic and fry for another 5 minutes.
  4. Drain and rinse the beans and add them to the pot. Cook for 5-10 minutes and then add the veg stock, soy sauce, and vinegar. 
  5. Increase the heat and leave to simmer for 15-20 minutes, stirring occasionally.
  6. Remove from the heat and blend until smooth with a stick blender. 
  7. Return to the heat for a further 5-10 minutes before serving.

Ingredients:

  • 6 ripe tomatoes, peeled and chopped
  • 1 cucumber, peeled, seeded, and chopped
  • 1 bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and minced (optional)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups tomato juice
  • Fresh basil leaves for garnish

Instructions:

  1. In a large bowl, mix the tomatoes, cucumber, bell pepper, red onion, garlic, and jalapeño (if using). 
  2. Take about half of the vegetable mixture and transfer it to a blender or food processor. Add the olive oil, red wine vinegar, salt, and black pepper. Blend until smooth. For a chunkier texture, pulse briefly.
  3. Pour the blended mixture back into the bowl with the remaining chopped vegetables. Add the tomato juice and stir well to combine. Cover and refrigerate for at least 2 hours, or overnight.
  4. Serve the gazpacho cold, garnished with fresh basil leaves and garlic bread on the side.

Ingredients:

  • 4 cups of vegetable broth
  • 2 cups of water
  • 2 packs of ramen noodles (discard the seasoning packets or save for another use)
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 2 cloves of garlic, minced
  • 1 cup of sliced shiitake mushrooms
  • 2 cups of baby spinach
  • 2 green onions, thinly sliced
  • Optional toppings: sliced tofu, boiled eggs, nori seaweed, sesame seeds, chili oil

Instructions:

  1. In a large pot, bring the vegetable broth and water to a boil over medium-high heat.
  2. Add the soy sauce, miso paste, sesame oil, grated ginger, and minced garlic to the pot, stirring to combine. Let the broth simmer for a few minutes to allow the flavors to meld together.
  3. Add the sliced shiitake mushrooms to the pot and let them simmer until they’re softened, about 5 minutes. While the mushrooms are cooking, prepare the ramen noodles according to the package instructions. Drain and set aside.
  4. Once the mushrooms are softened, add the baby spinach to the pot and stir until wilted. Divide the cooked ramen noodles among serving bowls and ladle the hot broth and vegetables over the noodles.

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 1 pound of ham hock or leftover ham bone
  • 1 pound of dried split green peas, rinsed and drained
  • 8 cups of chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions”

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  2. Add the ham hock or leftover ham bone to the pot, along with the dried split green peas and chicken or vegetable broth. Bring the soup to a boil, then reduce the heat to low and simmer, partially covered, for 1½ to 2 hours, or until the peas are tender and the ham is falling off the bone.
  3. Once the soup is cooked, remove the ham hock or bone from the pot and set it aside to cool slightly. Using an immersion blender or regular blender, carefully blend the soup until smooth and creamy, adjusting the consistency with additional broth if needed. While the soup is blending, remove any meat from the ham hock or bone and chop it into bite-sized pieces. Discard any excess fat or gristle.
  4. Return the chopped ham to the pot and stir to combine. Season the soup with salt and pepper to taste. Ladle the soup into bowls, garnish with fresh chopped parsley if desired, and serve hot. Enjoy!
