Famous for its high-quality vegetables, fresh herbs, and variety of dairy products, Bulgaria’s national cuisine is exactly the kind that most people don’t know is missing from their lives. But if you like light soups, salads, and pastries made with simple, healthy ingredients, you’ll love Bulgarian food. Here are some dishes we’d recommend starting with.

Tarator

One of the most common and traditional Bulgarian foods, tarator is a cold cucumber soup that is so easy to make it doesn’t even require cooking. It’s light, refreshing, and can be pulled together quite quickly without too many ingredients, so we highly recommend it as a jumping-off point for getting to know Bulgarian cuisine.

Kachamak

If you like Italian polenta, you’re probably going to love kachamak, a cornmeal porridge that is usually served with yogurt. Just like tarator, it only uses a few simple ingredients and doesn’t take very long to make, so it’s a great choice if you don’t want to invest too much time cooking a dish you’ve never even tried.

Banitsa

Do you love to bake? Then go ahead and find a banitsa recipe you like, because this traditional Bulgarian pastry is super yummy. Made with layers of filo dough, Bulgarian cheese, and whisked eggs, banitsa is one of those foods that work as a meal, snack, or dessert.
