Sometimes it feels like making a delicious dessert is a whole afternoon’s mission. This recipe for a hot and comforting chocolate pudding is a real crowd-pleaser and it literally couldn’t be easier. 

The chocolate sauce gets poured on top of the chocolatey cake batter, and magically ends up on the bottom. Once it’s cooked, you’ll end up with a decadent and gooey pudding cake that’ll have you going back for seconds. And thirds. Maybe even fourths. 

If a plain sponge cake is more your vibe, you can opt to leave the cocoa out of the sponge mixture and it’ll be just as tasty. Try this and thank us later.

Ingredients:

For the sponge cake batter:

  • 2 medium eggs
  • 3 ounces self-raising flour
  • 4 ounces margarine
  • 4 ounces caster sugar
  • 1 ounce cocoa powder
  • 1 teaspoon vanilla extract

For the chocolate sauce topping:

  • 4 ounces soft brown sugar
  • 2 ounces cocoa powder
  • 10 fluid ounces (or half a pint) of boiling water

Instructions:

  1. Mix all the sponge cake ingredients together in a large bowl, and pour into an oven-proof dish. The shape and size dish you choose is totally up to you.
  2. Add the brown sugar and cocoa to a small jug and slowly add in the boiling water, stirring until the mixture is fully dissolved. 
  3. Pour the topping mixture onto the cake batter, ensuring it’s pretty well covered.
  4. Bake at 385°F for 30 minutes, or until the liquid looks absorbed. 
  5. Dish up your pudding. There should be enough runny sauce mixture still at the bottom to keep the pudding deliciously moist.
  6. Enjoy!

There’s just something about roasted potatoes that makes them the ideal comfort food. Crispy and crunchy on the outside, and deliciously fluffy on the inside, roasties are pretty much perfect for any situation you might find yourself in.

The way you cook them can make all the difference. You could opt for the faster air-fryer approach, but getting your roasted potatoes crispy yet fluffy in the oven is just as simple. Here are the easy steps to making roast potatoes that you’ll soon be wanting to eat every day.

Ingredients:

  • 3 large potatoes (a floury, starchy type like Russets or Maris Piper)
  • Olive Oil
  • Garlic (cloves or powder)
  • Rosemary
  • Paprika (smoked, if you’d like)
  • Salt
  • Pepper
  • Roast Potato Seasoning (optional)

Instructions:

  1. If you’re using an oven, preheat it to 400 degrees Fahrenheit. A super hot oven is the optimum temperature to create a perfectly crispy potato.
  2. Cut your potatoes into large chunk-sized pieces. You want the pieces to be big enough so they have a fluffy middle, but not too big that they don’t crisp up while cooking.
  3. Parboil your potatoes in a big pot of salted water. This might seem like an unnecessary extra step, but parboiling is essential to get the potatoes to their optimal level of crispiness. When they’re done, they should be tender, but not mushy.
  4. If you’re using an oven, add oil to your pan whilst the potatoes are boiling so it’s hot by the time they hit the pan.
  5. Drain your potatoes and pat them dry if necessary. Next, transfer them to a large bowl or pot with a lid.
  6. Shake it up! This step is the big one. Vigorously shake the potatoes in your bowl or pot until the edges are roughened. This might seem small but it ensures maximum crispiness and fluffiness whilst cooking.
  7. Drizzle some oil over your potatoes, and sprinkle them with all the seasoning you’d like. We find a generous sprinkle of rosemary gives them the perfect flavor.
  8. For oven users: Spread your potatoes on the pan and use a spoon to cover them in some of the hot oil. Cook for 40-50 minutes or until they’re golden and crispy.
  9. For air fryer users: Place your seasoned potatoes in the basket at 380°F for 10 minutes, and then flip them and fry them for another 10 minutes, until they look golden.
  10. Enjoy!
