The most common problem with pasta salad is that it dries out fast. As it sits in the fridge, pasta absorbs all the dressing and doesn’t have the same texture or flavor it had freshly made. There’s a simple trick you can use to overcome this.

The idea is simple but very effective—dress the pasta salad twice. The first time is when the cooked pasta is still warm. It will absorb the dressing and allow you to proceed to the second dressing, right before serving. This way, your pasta salad will always be rich, flavorful, and look freshly made even if you actually made it a day or two before!
