Ground chicken is a great base for meals because it is versatile and cheaper than fresh chicken, while still retaining all the protein and nutrients. Since you can buy it frozen, it’s perfect to have on hand for nights when you’re not sure what to make. Here are some great dishes for nights like those.

Curry Galette

This is a delicious recipe to make and pretty easy to boot. Simply combine onions, potatoes, peas, and carrots in a big pan and sautee with oil, fresh or powdered ginger, and garlic. Add curry powder and any other spices you like, and then some ground chicken and a few spoonfuls of chicken stock and flour to stick it all together. Then lay out some store-bought pastry dough and fill it with your ground chicken, and bake in the oven at 375 F until the dough is cooked and the top of the galette is crispy.

Steamed Buns

Another great use for ground chicken is to use it as a steamed bun filling. You can sautee the chicken with onions, garlic, and ginger, and add soy sauce, sesame oil, msg, and whatever else you like. Add in some green onions for flavor and use your favorite steamed bun dough recipe to make the buns. You may again want to add a little bit of stock and flour to keep the filling sticking together.

Fritters

You can make a fritter with potato and ground chicken using a similar technique to hash browns. Combine drained grated potato and onion, ground chicken, chicken bouillon, parsley, and whatever spices you like in a bowl and mix until uniform. Then shape into fritters and fry in oil. Top with yogurt, sour cream, tahini, or ketchup.
